Undaria pinnatifida
This brown algae, among the best known, is most often called wakame. Locally, it is also found under the names ouessane, sea fern … Traditionally used in Japanese cuisine, it has ended up conquering Western countries seduced by its nutritional qualities. It is one of the most cultivated seaweed in the world. Harvested in spring and summer, it thrives in strong, cold currents and measures up to 3 meters in length.
Rich in iodine, wakame enhances the taste of food. Sometimes it has a slight taste of oyster. An essential ingredient of the famous miso soup, wakame is eaten especially raw, in salads. It can be served with cucumbers, as in sunomono salad, or enjoyed on its own with a little soy sauce, rice vinegar, and fresh ginger. Dry, it must be rehydrated before use.
Very rich in trace elements, beta-carotene, fiber, calcium and potassium, wakame is a precious ally for health.
It is best harvested in the spring when it is young. Fresh, it is bright green and gelatinous in appearance. Dried, it is almost black and pre-cut into strips or sheets: it can be stored in a dry place and will not expire.
