Venus shell
Venus verrucosa
Hidden under a round and thick shell with deep concentric streaks, clam, with its very delicate taste, remains relatively unknown. It is sometimes confused with sea almond. A fan of sandy bottoms, it is fished on foot and with pecks… Seagulls and gulls love it! Most of the catches are made in winter with a dredge towed by a boat that scrapes the seabed.
Venus shell is preferably eaten raw and plain. Its firm and very delicate flesh, and its sweet and salty taste, dispense artifice. Venus shell can also be eaten stuffed with parsley, shallot in gratin and even in soup.
Very light, clam is a source of vitamins B2 and B12, iron and phosphorus. A true mine of energy!
They are chosen alive with an intact shell. It should be tightly closed or close very quickly when touched. Clams are consumed quickly after purchase.
