Squid
Loligo vulgaris
This cephalopod is recognizable by its head which ends with eight tentacles and two long arms with suction cups. Depending on the region, the squid is called squid, casserole, or even squid in the Basque country. Light to reddish in color, the mollusk lives in deep waters where it feeds on plankton, small fish such as herring or sprat. It only reaches the coast during the spawning periods. In case of danger, it releases jets of ink.
Delicately iodized with sweet notes, the flesh is tender and mellow. It can be rubbery if cooked for too long. Easy to accommodate, it is delicious cooked in a sauce with chorizo and tomatoes, or fried, romaine, with a slice of lemon.
Lean, squid contains omega-3s, many minerals and trace elements, including iron, copper and selenium. It is also rich in vitamin B2, which is useful for refueling.
The freshness of the cephalopod is verified by a lively and iridescent pigmentation, and by the pearly appearance of the flesh as well as a marine odor.
