Spider crab
Maja squinado
Coming from the crab family, the spider crab can be recognized by its spiny red shell, slightly pointed at the front, and its long, slender legs. It owes its name to its resemblance to the terrestrial spider. It lives among algae, on sandy bottoms up to 50 meters deep in northern Brittany. In spring, it migrates to coastal areas to reproduce. Its activity is mainly nocturnal.
Amateurs prefer the female spider, called moussette, for its more abundant white flesh and finer, more flavorful taste. Cooking in court bouillon it preserves all the delicacy of its flesh.
Very low in calories, the spider is rich in proteins, minerals, in particular phosphorus and magnesium, but also iron, zinc and copper. It contains many vitamins.
Lively, she has movable eyes, intact legs and claws folded under her body. Its flavor is proportional to its weight: the heavier it is, the better it will be! Very fragile, it cannot be kept alive for more than 12 hours.
