Coming from the noble fish family, sole is one of the most consumed species despite its high price. It is without edges. It lives in shallow sandy bottoms where it is easily camouflaged thanks to its gray-brown color. Oval and flat, its body is fringed with fins. Active at night, it feeds on worms and small crustaceans. During the day, it burrows under the sand away from predators.
Its delicate and finely scented flesh makes it a delicacy. Renowned without bones, it can be cooked whole or in a fillet, in foil, stuffed, presented in a medallion … But the most classic way to prepare it is the famous sole meunière: floured, it is fried in butter then served with lemon and parsley.
Sole is one of the leanest fish. It is rich in valuable proteins necessary for growth, omega-3, B vitamins and PP. It also contains a good dose of trace elements.
Its freshness is characterized by the stiffness of its body and its very red gills. She is covered in mucus, her blind face is pinkish white, and her eye is clear.
