Sea perch
Dicentrarchus labrax
Called sea perch in the Atlantic, sea bass in the Mediterranean, this fish with fine and tight flesh is an exceptional product. Gray in color with yellowish or silvery reflections and a white belly, it can be identified by its two very distinct dorsal fins and its streamlined body. It thrives in rough waters where, an excellent hunter, it feeds on crustaceans, squid, cuttlefish and especially small fish, such as sardines and anchovies. Its fishing is highly regulated and imposes a minimum catch size.
The flesh of the sea perch is extremely fine when the fish has just been caught. It can be cooked whole in a salt crust, in foil, poached or simply in the oven, at a low temperature so that its delicate flesh does not dry out.
Low in fat, sea perch is particularly rich in proteins, vitamins (B, A, and E), minerals and trace elements.
Fresh, sea perch has a firm body, bright red gills and shiny scales that do not peel away from the skin. A dull body and an opaque eye, surrounded by brown, indicate that the fish is spoiled.
