Sea lettuce
Ulva Lactuca
Bright green, sea lettuce owes its name to its resemblance to garden lettuce. This flexible and very fine seaweed, almost translucent, thrives in shallow and luminous waters where it can measure from 10 to 50 cm. Lightweight, it comes off very easily under the effect of currents or storms. It appreciates both cold and temperate waters.
It can be eaten fresh or dry after being rehydrated. Its fresh and full-bodied taste is similar to the sorrel. It can be cooked in salads, in an omelet, as an accompaniment to fish or vegetables. It is also used as a condiment in soups, sauces and dressings.
Sea lettuce is rich in fiber, minerals and trace elements, especially magnesium, sodium, calcium and potassium. It also contains vitamins C and B9.
It is best harvested in spring and fall. Fresh, it can be kept for 48 hours. Young algae, more tender, are to be favored. In the form of flakes, it can be stored in a dark, bleaching place, and in a cool, dry place.

Fresh it can be preserved 48hours. Dried, she keeps longer in a dry place without light.
