Sea almond
Glycymeris glycymeris
A bivalve shell with a marbled, round and thick shell, the sea almond lives slightly buried in coarse sand between 0 and 80 m deep. To know its age, just count its streaks, like the rings of a tree! It is regularly found on seafood platters, sometimes as a replacement for clam. This shell is fished all year-round using dredges towed by boats.
With a fairly hard flesh, the almond can be eaten raw, but it is best cooked and stuffed with garlic and parsley, or in a sauce. If you fish them yourself, it is advisable to let them drain overnight in order to extract the sand.
The almond tastes very iodic. It is also rich in phosphorus and calcium.
The shell must be intact and closed or close immediately if touched. The fluid inside is plentiful and transparent, and the smell must be pleasant.
