Sardina pilchardus
This small pelagic fish lives in very dense schools between 10 and 100 meters deep where it feeds at night on zooplankton and small planktonic crustaceans. Sardine’s back is iridescent green, its sides are silver and its belly is shiny. In Brittany, the city of Douarnenez has long been the world’s leading sardine fishing port. It is at the heart of quality coastal fishing which still supplies some canneries in Brittany and Vendée.
Sardine is one of the fatty fish. Its fine flesh has a very pronounced taste. It can be stored in oil for several years or even decades, during which time it matures. Canners traditionally use two cooking methods : frying or steaming. Very fresh, it is grilled on the barbecue.
Sardines are rich in proteins and lipids, especially omega-3s. It also contains minerals, in particular calcium, phosphorus and selenium, and group B vitamins.
Fresh, she has a firm body, glowing skin, shiny eyes and bloodless gills. Altered, it loses its scales and its body softens.
