Salmo salar

Fresh, the silvery body of salmon can be tinged with brown, green and blue, and have many spots. On the plate, this very popular fish is recognizable by its pretty pink-orange color. Astaxanthin, a molecule found in the shell of the shrimp it feasts on, gives the salmon its color. Our carefully filleted salmon comes from Norway and Scotland.

The flesh of the salmon is firm and very tasty. Adopted by all the kitchens of the world, it can be cooked in all ways. It is delicious a la plancha, in foil, in the wok… the salmon is also very tasty smoked.

Salmon is rich in omega-3s, essential fats for preventing cardiovascular diseases, and rich in valuable protein. This fish also contains many vitamins and minerals.

Whole, the salmon must have a very firm body, a brilliant color and all its scales. In steak or fillet, its flesh has a dense texture and a marked orange-pink color.
