Contrary to what its silhouette suggests, the stingray does not belong to the flatfish family, but to that of sharks. It is nicknamed a seabird for its special way of swimming similar to flying. It has neither scales nor bones, but simple cartilage. Often large, she can stand over 1 meter tall and weight 10kg. The skate lives on sandy bottoms where it burrows and goes unnoticed. The wings of rays are particularly appreciated.
The flesh is firm with a slightly sweet taste. It is delicious cooked in a pan served with a white butter, or poached with a caper sauce. It is also eaten cold in a salad.
Very low in fat, the flesh contains many proteins, mineral salts and the famous B vitamins.
The skin should be slimy and full of mucus, and its underside translucent white to dull white with small light pink spots. The flesh is slightly pink. When altered, it gives off a very characteristic odor.
