Pollack
Pollachius pollachius
Pollack is a rare and high-quality product, especially found in western France. A formidable predator, it hunts sardines, sand lance, cephalopods and shrimps in flocks. Its back can range from bronze green to dark brown while its belly is light gray. This color is one of the criteria that differentiates it from its cousin the saithe, in addition to the very sharp black line it wears on its side.
Pollack is an exceptional dish that is eaten extra-fresh and with some precautions. Its delicate, white flesh tending towards rosé, does not tolerate ice cream or the living flame of the barbecue. In the pan, in the oven or in foil, all its aromas are revealed.
Very low in fat, which also contains a majority of omega 3, pollack is primarily a source of protein. It also provides significant amounts of vitamins B and D.
The colors of pollack should be bright with yellow highlights on the belly. Its gills are red and shiny. When altered, its color turns gray. The fillets must be light yellow on the skin side and have a beautiful shiny appearance.
