Periwinkle
Littorina littorea
The periwinkle can be recognized by its smooth and black conical shell closed by an operculum. This small gastropod lives in crevices in rocks, in ponds and under algae. Herbivorous, it moves mainly at night to feed on green algae and microalgae. It is found under several names: bigorne, berlingaou in Breton or even vignot. At low tide, it becomes inactive and its lid is tightly closed to retain moisture in its body.
Periwinkle requires short but intense cooking to reveal its aromas and tenderize its flesh. A little sweet, it deserves to be spiced up with pepper and aromatics when cooking in court bouillon. Periwinkle can be extracted from its shell with a pin and then enjoyed on a toast of buttered rye bread.
Periwinkle is an exceptional source of magnesium, but also of zinc, phosphorus and potassium.
Living, its operculum must be hermetically sealed and it must smell good of the sea. Periwinkle is also often sold cooked.
