Ogonori
Gracilaria Gracilis
The Ogonori lives in calm shallow waters and sandy bottoms in the Atlantic. This red algae comes in the form of clumps of fine tangled twigs that vary in color depending on the light it receives. It thus oscillates between red-brown to purple to yellowish-pink. Ogonori is mainly cultivated for its content of agar-agar which serves as a substitute for animal gelatin. It is widely consumed in Japan, the Philippines but also in Hawaii.
On the plate, the fresh Ogonori looks like Chinese noodles. Its fleshy texture and its salty taste lend itself very well to raw salads. It is sold fresh or dehydrated in the form of flakes.
Rich in protein, agar contains many minerals, especially calcium, sodium and phosphorus. It also has recognized antioxidant properties.
Its harvest is very limited. In a greenhouse it can be produced all year round. Agar is packaged fresh, frozen or dry, usually as a powder. It is also found in flakes and sticks.

Fresh it can be preserved 48hours. Dried, she keeps longer in a dry place without light.
