Lophius piscatorius
Nicknamed the toad or devil of the seas, the monkfish hides an exceptional chair under an unattractive physique. For this reason, only its tail, the famous monkfish, is presented on the stalls. But his cheeks and his liver are also highly sought after. Fish without scales, the monkfish lives up to 1000 m deep where it dresses its prey thanks to its dorsal fin in the form of spikes. She then swallows them easily thanks to her large mouth filled with sharp teeth.
Bone-free, its white, firm and very tasty flesh is an exceptional dish. Once its skin and backbone are removed, it can be cooked in a sauce, curry or Armorican, or barded with bacon. It becomes rubbery if its cooking is not controlled.
Monkfish is a lean fish but it contains very high-quality protein. Its flesh is rich in selenium, phosphorus, potassium, iodine but also in vitamins of group B and PP.
The flesh is firm, white and translucent but yellow when weathered. The pieces with the skin are to be preferred. This should then be shiny and wet. The absence of skin, especially in large specimens, may indicate a lack of freshness. The coloring of the cheeks should be pinkish white.
