Ling
Molva molva
Also known as julienne, the common ling lives between 200 and 500 m deep, in rocky bottoms and wrecks. This voracious predator, which can reach 2 meters in length, feeds on crustaceans, blue whiting, pout, cephalopods… Julienne is fished with a bottom trawl: 90% of French production is landed in Brittany. Our juliennes are threaded with care by hand.
The ling white and firm flesh is most often presented in a long fillet. Iodized and finely scented, poor in bones, it can be cooked in a pan, in the oven or in court-bouillon. In the Shetland Islands, its liver is highly valued for its finesse.
Low in fat, frank ling is an excellent source of protein, trace elements, and vitamins (B6, B12 and PP).
Whole, the frank ling must have a very firm and shiny body, a convex eye and a bright black pupil. Presented as a net, the flesh is pearly and shiny with light pinkish yellow reflections. Altered, it will take on a dirty yellow or gray color.
