Langoustine
Nephrops norvegicus
Contrary to what its name suggests, langoustine is closer to lobster than to crayfish. Nicknamed the damsel of the sea, it is an exceptional delicacy much sought after by gourmets. It lives in muddy or sandy-muddy bottoms where it digs its burrow. It only comes out for food, at dawn or dusk; hence can be fished mainly by trawl or trap. In France, its minimum catch size is set at 7 cm.
Its tender flesh, extremely fine in taste and slightly iodized, has a sweet flavor when very fresh. A quick cooking in court bouillon will preserve all its delicacy. It can be enjoyed with mayonnaise but can also be enjoyed plain as its flesh is very tasty.
Rich in copper, iodine, selenium and vitamin B12, langoustine concentrates the health benefits.
It is preferably chosen alive and wriggling. Its freshness is judged by its bright eyes, its very strong smell of the sea and the pale pink or orange-pink color of its shell without dark spots.
