Royal Kombu
Saccharina latissima
Wavy at the edges and embossed in the center, this brown seaweed can measure up to 3 meters in length. It is found under several identities: royal kombu, denteles, Neptune’s harness, saccharine kelp… It appreciates cold water and grows mainly below low sea level. Once the seaweed has dried, sugar crystallizes on its surface. hence its name saccharina, meaning sugar in Latin. It is often consumed as is but can also be used as a natural container for cooking in foil.
With a crunchy texture, it is distinguished by a smoky, salty and sweet flavor at the same time. It is the star ingredient in dashi, a broth made from bonito. It is also used as a flavoring in soups and salads and speeds up the cooking of legumes. Fresh, it can be used to wrap meat or fish. In the food industry, it is used as a viscosity agent.
The royal kombu is particularly rich in potassium and sodium.
The royal kombu is preferably harvested from June to September during high tides. The young algae, more tasty, are to be privileged. Its fresh, light-colored leaves are preserved in salt. It is also found dehydrated and crushed.
