Nicknamed the hen in Concarneau, the sun in Dunkirk, John Dory in England, the Saint-Pierre is often considered the best of fish. Praised by the great chefs, it belongs to the restricted court of noble fish. According to legend, its famous black spot located on both sides is the fingerprint of Saint-Pierre who wanted to recover a gold coin swallowed by the fish. This solitary hunter lives near the coasts on rocky bottoms and up to 500 m depth. Sold whole fresh, it is quite unusual on fishmongers’ stalls due to its rarity.
Its tender flesh is exceptionally fine in taste. In fillet, it is prepared in foil, roasted or grilled, but it can also be cooked whole in the oven or in court bouillon. The presence of its skin preserves its flesh during cooking.
In addition to being very thin, the John Dory is good for your health! It contains valuable omega-3s, minerals and B vitamins.
Fresh, the John Dory has a firm body, shiny skin and eyes, and very black side spots. His gills are red and he smells of the sea.
