Hollow oyster
Crassostrea gigas
Hidden under a shell with a very flaky appearance, the hollow oyster is one of the most popular shellfish among the general public. This species is even the subject of a strong culture in France. It can be eaten all year round, but connoisseurs swear by the months in R (April, September, etc). Very sensitive to the quality of its environment, the oyster is raised in parks at sea where it filters its food, in particular phytoplankton. Its taste varies depending on the production place. Our oysters are all fished in the bay of Morlaix.
The hollow oyster is characterized by a very marked iodine flavor as well as a subtle nutty taste. Both firm and supple, it can be enjoyed plain or with a drip of lemon juice. To appreciate all of its aromas, we empty the first water and wait for it to make a second before biting it.
A true concentrate of vitamins and minerals, the oyster is rich in iodine, iron, zinc, copper, phosphorus, vitamin B12 … It is a complete food while being very light.
The oyster must be closed, heavy, having a smell of the sea and, after opening, bathe in its water. Its flesh shrinks when touched with the tip of a knife or under lemon acidity.
