Flat Oyster
Ostrea edulis
The round shape of the shell of the flat oyster distinguishes it from its cousin the hollow oyster, which is much more elongated. The interior is smooth, pearly and may have bluish-gray areas. Its scarcity, its more pronounced taste and its slower growth than the cupped oyster, make it an exceptional product popular with amateurs. « The Belon » is a flat oyster appellation granted to all flat oysters born, raised and matured in Brittany.
Long in the mouth, the flat oyster has a crunchy and fleshy white color with gray and brown reflections. It tastes of hazelnut and sea ; is eaten mainly raw, natural or with a hint of lemon. Cooked hot by top chefs, it is a very refined dish.
This all-natural seafood is rich in minerals and vitamins. The oyster is nourishing without being greasy.
The smell is an essential criterion to qualify the freshness of an oyster. The shell is also tightly closed and heavy in the hand. After opening, it should be filled with water and retract under the tip of the knife.
