European crayfish
Palinurus elephas
Resident of rocky bottoms, like the lobster, crayfish can be identified by its spiny red shell, very fine claws and the end of its fan-shaped tail. She lives in a group but is very home-like: she only ventures out to feed and reproduce. In the face of danger, it propels itself back with its tail and chirps, rubbing its antennae against its head. It has long been called the sea grasshopper. Victim of overfishing, it is protected by regulations.
The quality and finesse of its white flesh, very tight but more tender than lobster, have made its reputation. After simple cooking in water, it is usually eaten plain, once cooled.
Lobster is naturally rich in magnesium, phosphorus, potassium and B vitamins.
Its clear color, pleasant smell and liveliness are indicators of freshness. In a defensive reflex, she should wag her tail when lifted and straighten her paws.
