Brill
Scophthalmus rhombus
Often confused with turbot, brill are distinguished by a more oval shape, smooth skin and the absence of bone growth on its upper surface. It lives between 15 and 70 m deep on sandy bottoms where it hides very easily. Molluscs, worms, small fish and crustaceans constitute the bulk of its diet. The catfish owes its name to its large dorsal fin.
Unfairly overlooked, the white flesh of brill is fine and rich in flavor. This brill is appreciated even more when it is thick with plump fillets. Poached or grilled, in a pan or in the oven, the brill lends itself to all variations.
Lean and easily digestible fish, brill are rich in phosphorus. It also contains vitamins B and PP.
The brill must have a firm and shiny body, very red gills and flexible fins.
