Breton bouquet
Palaemon serratus
The Breton bouquet has the particularity of being gray and translucent when raw and pink when cooked. This change in color is linked to a molecule in its shell, astaxanthin, itself surrounded by a gray-colored molecule that cannot withstand heat. Very popular with foodies and anglers, it lives in shoals in calm waters and seagrass near the coast. When the sea goes down, it is not uncommon to see them in the small ponds.
Its very famous flesh is firm, delicate and fragrant. It is served with mayonnaise or a simple toast of buttered rye bread.
A source of protein, the bouquet is rich in B vitamins, phosphorus and selenium, a trace element with antioxidant and immune system strengthening properties. The bouquet is also very low in calories.
When alive, its freshness is determined above all by its seaweed smell, its wriggling and its translucent color. Altered, it will tend to turn white and withdraw into itself.
