Mackerel is a popular fish that is very famous around the world. It lives in sometimes very dense schools and feeds on zooplankton, pelagic crustaceans and small fish. It is found in areas with cooler water in summer and warmer in autumn. It stands out thanks to its smooth, striped skin and iridescent reflections.
Fragile, the flesh of mackerel has a very pronounced and recognizable taste. Fresh, it is delicious on the barbecue, topped with mustard and garnished with wild fennel, or in the oven in foil. The most popular recipe remains mackerel in white wine, a staple of French gastronomy.
Mackerel is one of the richest marine species in omega 3 fatty acids. It is also loaded with phosphatidylserine, a food of choice for the brain.
The fresh mackerel remains very firm and very shiny, it keeps its iridescent reflections. Be careful, however: if the cold chain is altered or broken, mackerel can release histamine and cause poisoning.
